Ingredients

  • 2 large eggplants (baingan), sliced into rounds
  • 4 tablespoons mustard oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder 
  • teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnishing

  • Cut the baingan into rounds that are neither too thick nor too thin. Please soak the slices in salt water for 10-15 minutes. After patting the slices of baingan dry, drain the water.
  • Sprinkle salt, sugar, red chili powder, turmeric powder, and on the slices of baingan. 
  • You can add amchur powder and garam masala powder. 
  • Combine the ground spices, then evenly distribute it over the slices. Put them apart.
  • Heat 3–4 tablespoons of mustard oil in a pan. On a plate, place the rice flour. Dust off any excess rice flour after evenly coating each slice with it.
  • Place the baingan bhaja on paper towels as they are being fried so that the extra oil may be absorbed.

  • Once sliced, baingan slices quickly lose their color. Therefore, you should either utilize the cut pieces immediately or place them in a water bowl.
  • Baingans are not all acrid. It is better to soak the slices in salted water to remove the bitterness. 
  • As a snack, baingan bhaja goes well with curd, chutney, or your personal sauce of choice. You can use this in a sandwich with cheese.
